The crown jewel of any Mediterranean grill plate is the Kafta Kabab and the trick is in the freshness of the meat, the quantity of the herbs and the quality of the spice. Enjoy a touch of Middle Eatern flavor in your  backyard burger or taste these same authentic flavors on skewers as appetizers with dippers on the side. 

2 lbs ground beef
½ cup finely chopped or grated onion
¼ cup minced parsley
¼ cup minced mint
1 tablespoon sea salt
1 tablespoon Soul Roots Kafta Spice

Mix all ingredients well and form into hamburger patties or kafta kebabs on pre-soaked bamboo skewers. Chill for 1 hour before grilling. If using lean meat, brush with Olive Oil. Place on a hot grill and cook well to desired level.  Serve burgers on buns with the works or inside a warm pita with Sumac Tomato and Cucumber Salad.  Serve skewers with homemade tarator sauce and creamy tzatziki for dipping.
